Ingredients:

  • 700 grams chicken hearts
  • 1 tablespoon baking soda
  • 1 teaspoon salt
  • a pinch of black pepper
  • 100 milliliters water
  • 3 cloves garlic, sliced
  • 50 grams mustard
  • 1 drizzle of olive oil
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 3 ripe tomatoes, chopped
  • 1 teaspoon chimichurri

Instructions:

1. Add 1 tablespoon of baking soda to 700 grams of chicken hearts and mix well.
2. Transfer everything to a large skillet over medium heat filled with boiling water and cook for 10 minutes.
3. Remove the hearts from the boiling water and cut each of them in half.
4. Add a drizzle of olive oil to a large skillet over medium to low heat. Add the cut chicken hearts, mix to combine, season with 1 teaspoon of salt, a pinch of black pepper, and 100 milliliters of water. Cook everything for five minutes.
5. Add 3 sliced garlic cloves, 50 grams of mustard, mix everything to combine, cover the skillet, and let everything cook for 10 minutes.6. Meanwhile in another skillet, add a drizzle of olive oil, 1 medium onion chopped into thin strips, 1 red bell pepper chopped into small cubes, and sauté until slightly wilted.
7. Add three ripe tomatoes cut into small cubes, season with 1 teaspoon of salt, a pinch of black pepper, 1 teaspoon of chimichurri, and sauté for another five minutes.
8. Add the sauteed vegetables to the skillet with the chicken hearts. Mix until combined.
9. Cover the skillet again and cook for another 10 minutes.
