The Perfect Salmon with a Pineapple Twist: An Italian Secret!

Ingredients:

  • 2 kilos salmon fillet
  • 600 grams cream cheese
  • Zest of 1 lemon
  • Parsley to taste
  • 1 teaspoon salt
  • Pinch of black pepper
  • Drizzle of olive oil
  • Pinch of garlic powder
  • 4 pineapple slices
  • 1 tablespoon unsalted butter
  • Chopped mint to taste
  • Honey to taste

Instructions:

1. Cut a piece of salmon fillet weighing approximately two kilos into strips without cutting the fillet all the way through. Set aside.

2. In a medium bowl, add cream cheese, lemon zest, parsley, salt, black pepper, olive oil, and mix until combined.

3. Transfer the cream cheese mixture into a piping bag and fill the gaps in the salmon with this cream.

4. Season everything with a pinch of salt and garlic powder.

5. Bake in a preheated oven at 200 degrees Celsius 400 degrees Fahrenheit for 40 minutes. Keep an eye on the salmon as baking time may vary depending on your oven.

6. While the salmon bakes, sprinkle ground cinnamon on both sides of 4 pineapple slices.

7. In a large skillet over medium to low heat, melt 1 tablespoon of unsalted butter.

8. Add the pineapple slices and fry until golden brown on both sides.

9. Remove the pineapple slices from the skillet and cut them into cubes.

10. Transfer the chopped pineapple to a medium bowl, add chopped mint and honey to taste, and mix until combined.

11. Once the salmon is baked through, add the pineapple mixture on top and spread well.

12. Serve and enjoy!
