  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cumin

Instructions

1. Roast the Eggplant:

  • Preheat your oven to 400°F (200°C).
  • Brush both sides of the eggplant slices generously with olive oil.
  • Arrange them on a baking sheet and bake for 15-20 minutes, flipping halfway through, until golden brown.

2. Prepare the Minced Meat Filling:

  • In a bowl, combine the minced meat, chopped onion, parsley, coriander, salt, black pepper, red pepper, and cumin. Mix well until evenly seasoned.

  • In a skillet, heat the olive oil over medium heat.
